SMOOTH HUMMUS RECIPE
So while the long stays in the hospital one of the nurses brought me hummus and I always liked hummus, but now I am obsessed. It is one of my all-time favorite snacks that I don’t get sick of. I would eat it before taking my medicine because I had to eat before and it was creamy and coated my stomach. The hummus I got was a locally made hummus. I researched recipes and this is what I have come up with close to what the nurses spoiled me with. This recipe does require skinned chickpeas, but to skin them all you do is pinch them and the skin should pop off. Removing the skins is the key.
Place all ingredients all, but the water in a food processor. Process until mixture is smooth, about a minute.
Add the water tablespoon at a time, and process until desired consistency. Check the flavor, add salt if needed.
Spoon the hummus into a serving bowl and drizzle with olive oil and sprinkle with paprika.
Keep refrigerated until serving. Serve with pita chips or flatbread.
