This is an easy dinner that is quite colorful. I do not have a picture of this dinner yet, but it is too good not to share. ENJOY!
  1. Preheat oven to 400 degrees. Set aside a large baking sheet.
  2. On a separate washable cutting board, cut chicken breasts in 1/2 inch strips. On another clean cutting board cut onions and peppers into 1/2 inch strips also.
  3. Place chicken and vegetables on a baking sheet. Sprinkle cumin, chili powder, garlic, paprika, salt and pepper and drizzle with olive oil.
  4. Using tongs, toss the ingredients to evenly coat the chicken and vegetables.
  5. Bake for 15 minutes.
  6. Remove from the oven, use tongs to mix the vegetables. Move to 1/2 of the pan.
  7. Try to clean as much of juices as you can on the open end of the sheet pan. Place tortillas on the clean end and put in the oven for 5 more additional minutes.
  8. Serve with tortillas and the optional toppings.
