Creamy Chicken Tortellini Soup
Easy and delicious soup for those cold days. My family loves it.
Place a large soup pot over medium heat. Add the olive oil and chopped onions. Saute for 4 minutes until transparent. Then add the chopped bell pepper, carrots, and garlic. Saute another 5 minutes.
Add chicken breasts, chicken broth, thyme, 1 1/2 teaspoon salt, and 1/2 teaspoon ground black pepper to the pot.
Turn down heat a little and simmer 15 minutes, until the chicken in cooked through. Remove the chicken and shred.
While it is still simmering, stir in Tortellini. Be sure to stir so they don’t stick together. Place chicken back in the soup. Cook tortellini for about 15 min. then turn off the heat.
Stir in 1 cup heavy cream, spinach, and parsley. Salt and pepper, to taste.
