CRISPY PARMESAN GARLIC CHICKEN WITH ZUCCHINI
I love chicken and zucchini, so this is one of my favorites and it is so easy to make. My family really likes it too and that is a big plus. When zucchini is in season during the summer we eat quite a bit of it.
In a large skillet over medium heat melt 2 Tbsp. butter. To make the chicken: Melt remaining butter in a shallow dish. In another shallow dish mix the bread crumbs, parmesan cheese, and flour. Dip the chicken in the butter and then into the breadcrumbs and then place in skillet to cook.
Cook each side for 3-4 minutes, or until chicken is cooked through and outside is golden.
Add 2 Tbsp. of butter to skillet and add minced garlic for about a minutes. Add the zucchini to the skillet and cook until tender. Salt and pepper to taste and sprinkle the cheese on top. Add the chicken back to the skillet and heat for a couple of minutes, serve hot.
