Crockpot Chicken Pot Pie

This is classic comfort food and who doesn’t love it on a chilly day. My family loves chicken pot pie and this makes it so easy to make.

So while the long stays in the hospital one of the nurses brought me hummus and I always liked hummus, but now I am obsessed. It is one of my all-time favorite snacks that I don’t get sick of. I would eat it before taking my medicine because I had to eat before and it was creamy and coated my stomach. The hummus I got was a locally made hummus. I researched recipes and this is what I have come up with close to what the nurses spoiled me with. This recipe does require skinned chickpeas, but to skin them all you do is pinch them and the skin should pop off. Removing the skins is the key.


With the cool days coming around it’s definitely time to start the crock-pot up with the soups and stews for fall. Not only are they quick and easy to make and you literally throw everything in the crock-pot and forget it. So with the school year starting it’s great!


Two of my favorite things are chicken and spinach, so combining those two is one of my favorite things to do. This is a very easy and good meal.
