So while the long stays in the hospital one of the nurses brought me hummus and I always liked hummus, but now I am obsessed. It is one of my all-time favorite snacks that I don’t get sick of. I would eat it before taking my medicine because I had to eat before and it was creamy and coated my stomach. The hummus I got was a locally made hummus. I researched recipes and this is what I have come up with close to what the nurses spoiled me with. This recipe does require skinned chickpeas, but to skin them all you do is pinch them and the skin should pop off. Removing the skins is the key.
Two of my favorite things are chicken and spinach, so combining those two is one of my favorite things to do. This is a very easy and good meal.
