This is one of those comfort foods that make you just feel good when you eat it. I am all about easy and good food.
I love chicken and zucchini, so this is one of my favorites and it is so easy to make. My family really likes it too and that is a big plus. When zucchini is in season during the summer we eat quite a bit of it.
If you want to make a bunch of these before the weekday it would be so easy to whip them up and everyone could have their favorite combination. The kids can grab one for a quick breakfast when they run out the door.
So while the long stays in the hospital one of the nurses brought me hummus and I always liked hummus, but now I am obsessed. It is one of my all-time favorite snacks that I don’t get sick of. I would eat it before taking my medicine because I had to eat before and it was creamy and coated my stomach. The hummus I got was a locally made hummus. I researched recipes and this is what I have come up with close to what the nurses spoiled me with. This recipe does require skinned chickpeas, but to skin them all you do is pinch them and the skin should pop off. Removing the skins is the key.
